Meal Ideas 6/5-6/11

Tacos with Chicken or Beef: Soft tacos with lettuce, tomato, onion or fry the tortillas to make hard shell tacos. Serve with guac, salsa and cauliflower Spanish rice.

Enchiladas: Buy or make enchilada sauce. Click here for enchilada sauce recipe. For enchilada sauce, you will need tomato sauce. Click here for a tomato sauce recipe.
Nachos: Cut corn tortillas into chip sized wedges. Brush with mixture of oil and lime juice. Spread on cookie sheet and bake at 350 for 7 minutes. Rotate and bake for another 7 minutes. Sprinkle with cumin, chili powder, salt or other spices of your choosing.
Taquitos: Roast chicken and beef in oven or cook to your liking. Shred and roll into corn tortillas. Add cheese and salsa as well if you like. Brush with oil and bake at 400 for 15 mins or until crispy.
Salsa: Roast tomatoes, onion, and jalepenos at 400 until browned. Blend then add garlic, lime juice, salt to taste
Guacamole: Mix avocados, onion, garlic, jalepenos, lime juice, salt, pepper

Sausage with Bell Peppers and Onions: Serve on bun with tomato sauce
Pasta with Bell Peppers and Onions: Serve with tomato sauce and salad
Pasta Salad: Add bell peppers, onions, broccoli, cauliflower, carrots to cooked rotini pasta. Mix with homemade Italian dressing.

Turkey with Mashed Potatoes
Chicken with Tomatoes, Spinach, Mashed Potatoes

Sandwiches w/ Chicken or Turkey: Add tomatoes, lettuce, avo, cheese

Salad: Add chicken or turkey, bell peppers, carrots, tomatoes, cucumbers, broccoli, cauliflower. Serve with Italian dressing.
